Carrot and Methi Sabzi

Ingredients: 2 cups carrots (diced); 2 cups fenugreek leaves (finely chopped); ½ teaspoon cumin seeds (jeera); 1 large onion (finely chopped); 4 green chillies (finely chopped); 2 tsp ginger garlic paste; ¼ tsp turmeric powder ; 2 tsp coriander powder;  2 tsp oil; salt to taste; a fresh piece of wheat dough.

Method: Heat the oil in a non-stick pan and add the cumin seeds. When they begin to crackle, add the onion, green chillies, ginger-garlic paste and sauté for two minutes. Add the fenugreek leaves to this mixture and sauté it for another two minutes. Add the carrots, turmeric and  coriander powder, salt, one cup of water and stir for a while. Cover and cook over a slow flame till all the moisture has evaporated and the carrots have become tender. Now if the salt is in excess, simply put the wheat dough in it and heat it over slow flame for a few minutes, stirring continuously. The wheat dough will absorb the excess salt content; you can then remove the dough from the vegetable. Sometimes extra salt may get absorbed by the dough so make sure you add a pinch of salt later, if required.
